Oat Cookies (Endometriosis Friendly)

These Oat Cookies hit the sweet spot, without any added sugar! No dairy, no soy & no sugar makes these Endo friendly (for me!) and also great for my child to enjoy too.
A couple tips to make these cookies tasting great and right for you:
If you are sensitive to gluten, you can directly switch out the flour for gluten free / oat flour.
Make sure you press the cookie balls onto the tray as these will not spread in the oven.
I recommend using pure vanilla extract to avoid the added sugar.

Great for your children aged ~12+ months.
Best eaten within 2-3 days.

Ingredients List
For the cookies
115g coconut oil
120g dates
120g self raising flour
150g rolled oats
15g chia seeds
1 medium egg
1 teaspoon ground sweet cinnamon
1 teaspoon bicarbonate of soda
1 teaspoon pure vanilla extract
Method
Preheat your oven to 150C Fan, or 170C regular.
Place the coconut oil and chopped dates into a small saucepan with a lid, and bring to a boil.
Once boiling, take off from the heat and leave to the side for 10 minutes. This will allow the dates to soften.
In a large mixing bowl, add all of the dry ingredients and mix.
Once the dates have softened for 10 minutes, use a stick blender / NutriBullet to blend until the dates form a bit of a paste. If some small lumps remain this is okay.
Add in the egg, vanilla extract and date/oil mixture to the dry ingredients and mix to combine.
Using your hands, roll the cookie dough into evenly sized balls, around 55-60g each, and place directly onto your lined tray.
Press the balls into your desired cookie shape. Around 1cm deep.
Place in the oven for 8-10 minutes or golden brown.
Leave them to cool on the tray for 10 before transitioning them to a cooling rack.
